STK in The Cosmopolitan of Las Vegas bills itself as “Not Your Daddy’s Steakhouse.” But Daddy doesn’t know that his little girl can put down a steak and still rock a couture dress at Marquee Nightclub. Chef Stephen Hopcraft serves a $65-per-lady, three-course, family-style meal that includes salad, entrée, sides and dessert as well as round of shots.

STK, the sultry steakhouse inside The Cosmopolitan of Las Vegas, transformed into a Hamptons-style beach villa for the third year in a row for an all-white attire end-of-summer soiree hosted by former Bravo TV reality star and fashion mogul Gretchen Christine Rossi.

 

The invitation-only all white event kicked off at 9:30 p.m. with a celeb-filled white carpet. Dressed to impress in summer whites, party revelers were transported into the STK-turned-Hamptons beach estate complete with cabana-style seating and chic white décor. Mysterious white-themed surprises around every corner added to the evening’s pizzazz as STK brought summer to an end.

Rossi, Bravo TV’s “The Real Housewives of Orange County” reality TV star, fashion icon and designer, upped the trend-worthy ante as she walked the white carpet wearing a custom Stello by Stephanie Costello gown. Her handbag collection, Gretchen Christine, is set to debut at New York Fashion Week this week. Rossi’s fiance Slade Smiley, was wearing the XXXX Collection from Stitched, the men’s haberdashery inside The Cosmopolitan of Las Vegas.

VIP guests enjoyed Pernod Ricard sponsored open bar and light passed appetizers from Executive Chef Stephen Hopcraft’s white theme-inspired menu including Baked Clams, Fennel Brendade on Crostini, Lobster Dumplings and Truffled Popcorn. STK Pastry Chef Brigette Contreras sweetened the menu with all-white desserts including Coconut Macaroons and Mini Banana Cream Pie Trifles.

Las Vegas is heating up — weather-wise. Temps next week are expected to be in the 90s. Visitors can take the plunge at pools other than the one at their hotel. In fact, even the swanky Mandarin Oriental is allowing those who aren’t registered there to enjoy its exclusive pool and first-class amenities (and more on that in a minute).

There’s generally (but not always) a charge for non-guests, and the fees can change if, for example, a pool is hosting a special event. Some pools welcome families; others are for adults only. Call ahead for details.

Here are some suggestions on where to splash down without having to produce a room key.

Bagatelle Beach, (702) 701-0200. This is adjacent to the Tropicana but has its own private entrance. Bagatelle promises fun in and out of the water. There are two pools and beach activities including a sand volleyball court. Cool off with a custom cocktail such as the pampelmousse, made with Avion tequila and fresh grapefruit and pomegranate juices. It’s slated to open May 4; prices aren’t yet set, a rep said but she expected them to be about $20 for women and $30 for men.
